APPAM AND POTATO STEW ( Famous Kerala breakfast)



Ingredients for Appam



2 glass raw rice

A handful of cooked rice for each glass of rice

1 tsp yeast

2-3 tbsp sugar

Salt as per taste

Coconut half portion grated

Oil
Method
1.       Soak the rice in water around 2-3 hour.

2.       Grind it along with cooked rice, coconut water and half grated coconut to a smooth batter. If needed add sufficient water to get batter consistency.

3.       Transfer the batter in other wide vessels. Now add yeast and sugar do not mix it with hand or ladle, take the vessels in hand and rotate in circular motion so that the yeast merges in the batter.

4.       Close it with lid and leave for fermentation overnight.

5.       Before start making appam add salt in it and mix well.

6.       Now Heat Appam pan, pour a ladle of batter in it and rotate it till you get the thin edges.

7.       Close the lid till it done.



Ingredients for Potato Stew

5-6 medium size Potatoes diced

2 Large Onion diced

1 ½ “ginger finely chopped

2-3 Green chillies slit

1 tsp Mustard seeds

Few curry Leaves

1 cup of thick coconut milk (First milk)

2 cup thin coconut milk (Second milk)


Method


1.       In a mixer grind the grated coconut in to a smooth paste adding 2 cups of water... Pass the paste through a very fine strainer or a muslin cloth...
Using a ladle press down on the paste to extract as much coconut milk as possible...This is the first extract...

2.       Place the residue back in the mixer and add approximately 1 cup of water...
Blend once again and strain...This is the second coconut extract...

3.       Heat the oil and put mustard seeds when its start splutter add onion, green chillies, ginger and curry leaves sauté till onion gets transparent.

4.       Add potatoes, salt and ½ cup water cook till potatoes half done.

5.       Now mix thin coconut milk and let it simmer for 15-20 minutes till potatoes get done. Add thick coconut milk and cook for 5 minutes continuously stir then remove from heat..

6.       Serve it with Appam.





Note-:  Remembered add first extract just before removing from heat..
